Overzicht
Bourgogne ligt in het oosten van Frankrijk, van Chablis in het noordwesten tot boven Lyon, over de departementen Yonne, Côte-d'Or, Saône-et-Loire en Rhône.
Van noord naar zuid: Chablis, Côte de Nuits, Côte de Beaune, Côte Chalonnaise, Mâconnais en Beaujolais. Het gebied volgt de Saône en de rand van het Massif Central over ongeveer 200 kilometer.
Rood is vooral Pinot Noir. Wit is Chardonnay. Aligoté komt minder voor. Pinot Blanc hoort bij Mâconnais. In Beaujolais is Gamay de rode druif.
Overview
Bourgogne lies in eastern France, from Chablis in the north-west to above Lyon, across Yonne, Côte-d'Or, Saône-et-Loire and Rhône.
From north to south: Chablis, Côte de Nuits, Côte de Beaune, Côte Chalonnaise, Mâconnais and Beaujolais. The area follows the Saône and the edge of the Massif Central for about 200 kilometres.
Red is mainly Pinot Noir. White is Chardonnay. Aligoté is less common. Pinot Blanc belongs with Mâconnais. In Beaujolais Gamay is the red grape.
Kelder
De gisting duurt ongeveer tien dagen, korter dan bij veel Bordeaux. Minder tannine uit pit en schil geeft een lichtere smaak. Sommige witte Bourgogne is na een jaar drinkbaar.
Na de gisting rijpt de wijn nog anderhalf tot twee jaar voor hij de markt op gaat. Bij slecht weer mag suiker bij de most, onder toezicht, zodat de gisting doorgaat.
Cellar
Fermentation lasts about ten days, shorter than for much Bordeaux. Less tannin from pip and skin gives a lighter taste. Some white Bourgogne is drinkable after a year.
After fermentation the wine ages another year and a half to two years before it goes to market. In poor weather sugar may be added to the must, under control, so fermentation continues.
Chablis
Chablis ligt aan de Serein, geografisch los van de rest van Bourgogne. Alleen Chardonnay is toegestaan. De bodem is kalksteen, vaak met mergel.
De stokken blijven kort, zodat het witte gesteente zon terugkaatst. De most gaat in roestvrij staal. Gewone Chablis is jong drinkbaar, maar kan ook langer liggen.
Chablis
Chablis sits on the Serein, geographically apart from the rest of Bourgogne. Only Chardonnay is allowed. The soil is limestone, often with marl.
The vines stay short, so the white rock reflects sun. The must goes into stainless steel. Ordinary Chablis is drinkable young, but can also lie longer.
