Overzicht
Port komt uit het dal van de Douro in het noorden van Portugal. De hellingen zijn leisteen en graniet. Wijngaarden staan op terrassen achter muurtjes van lokale steen.
De naam Port komt van de havenstad Porto, niet van het dal zelf. Vanuit Porto ging de wijn naar Engeland. Daardoor hebben veel stijlen Engelse namen.
Overview
Port comes from the Douro valley in northern Portugal. The slopes are slate and granite. Vineyards sit on terraces behind walls of local stone.
The name Port comes from the harbour city Porto, not from the valley itself. From Porto the wine went to England. That is why many styles have English names.
Mutage en regels
Tijdens de eerste rijping gaat brandewijn van circa 77 procent alcohol bij de most. De gisting stopt. Restsuiker blijft. Dat heet mutage. De wijn is zoeter dan de meeste stille wijnen.
Vanaf circa 1700 groeide de Engelse vraag, toen Bordeaux duurder werd door heffingen. In 1756 volgden Portugese regels over gebied, prijs, vervoer en keuring.
Wijngaarden tussen de Spaanse grens en Caldas de Moledo, hemelsbreed circa 70 kilometer ten oosten van Porto, zijn ingedeeld van A tot F. Hoogte, bodem, ligging, ras en leeftijd van de stokken tellen mee.
Mutage and rules
During first ageing brandy of about 77 percent alcohol is added to the must. Fermentation stops. Residual sugar remains. That is mutage. The wine is sweeter than most still wines.
From about 1700 English demand grew, when Bordeaux became dearer through duties. In 1756 Portuguese rules followed on area, price, transport and inspection.
Vineyards between the Spanish border and Caldas de Moledo, about 70 kilometres east of Porto as the crow flies, are classed A to F. Height, soil, aspect, grape and vine age count.
Druiven en kelder
Rode Port gebruikt onder meer Tinto Cão, Tinta Amarela, Tinta Barroca, Tinta Roriz, Tinta Francisca, Touriga Franca en Touriga Nacional.
Witte Port gebruikt onder meer Malvasia Fina, Viosinho, Donzelinho, Esgana Cão, Folgazão, Códega en Gouveio.
Na persing rust de most bij de wijngaard. Daarna minstens drie jaar op eiken, vroeger vooral in Vila Nova de Gaia. Sinds 1986 mag die rijping ook elders in het Portgebied.
Grapes and cellar
Red Port uses among others Tinto Cão, Tinta Amarela, Tinta Barroca, Tinta Roriz, Tinta Francisca, Touriga Franca and Touriga Nacional.
White Port uses among others Malvasia Fina, Viosinho, Donzelinho, Esgana Cão, Folgazão, Códega and Gouveio.
After pressing the must rests near the vineyard. Then at least three years in oak, formerly mainly in Vila Nova de Gaia. Since 1986 that ageing may also happen elsewhere in the Port area.
Stijlen
Ruby is de jongste rode Port, fruitig. Tawny is ouder, lang op eiken, gouder van kleur. Aged Tawny vermeldt 10, 20, 30 of meer dan 40 jaar als gemiddelde leeftijd van de blend, plus de botteldatum.
Vintage is één uitzonderlijk oogstjaar, na toestemming van het Instituto do Vinho do Porto. Twee jaar hout, daarna flesrijping. Vaak decanteren wegens bezinksel.
Late Bottled Vintage, LBV, rijpt langer op vat, gemiddeld rond vijf jaar. Colheita is Tawny van één oogst, minstens zeven jaar op hout, met jaartal op het etiket.
Styles
Ruby is the youngest red Port, fruity. Tawny is older, long in oak, more golden in colour. Aged Tawny states 10, 20, 30 or more than 40 years as the average age of the blend, plus the bottling date.
Vintage is one exceptional harvest year, after permission from the Instituto do Vinho do Porto. Two years in wood, then bottle ageing. Often decant because of sediment.
Late Bottled Vintage, LBV, ages longer in cask, around five years on average. Colheita is Tawny from one harvest, at least seven years in wood, with the year on the label.
Bewaren
Bewaar Port liggend, donker, zonder hitte of schommeling. Ruby en jonge Tawny onder de tien jaar niet te lang. Oudere Tawny, Colheita en Vintage winnen in de fles.
Witte Port koel. Rode Port op kamertemperatuur. Vintage en LBV ook op kamertemperatuur.
Storage
Store Port on its side, dark, without heat or swings. Ruby and young Tawny under ten years not too long. Older Tawny, Colheita and Vintage gain in bottle.
White Port cool. Red Port at room temperature. Vintage and LBV also at room temperature.
