Overzicht
Sherry komt uit Jerez de la Frontera in Andalusië, in het zuidwesten van Spanje, iets ten noorden van Cádiz aan de Atlantische Oceaan.
Er wordt alcohol toegevoegd. Het alcoholgehalte ligt tussen 17 en 22 procent.
De Nederlandse naam komt van Sherish, de Arabische naam voor Jerez. Droge Sherry past als aperitief, zoete als dessertwijn.
Overview
Sherry comes from Jerez de la Frontera in Andalusia, in south-west Spain, a little north of Cádiz on the Atlantic.
Alcohol is added. The strength lies between 17 and 22 percent.
The Dutch name comes from Sherish, the Arabic name for Jerez. Dry Sherry suits an aperitif, sweeter styles a dessert.
Marco de Jérez
In 1483 stelde Jerez verordeningen vast over eisen aan de wijn. Later kwam de zone Marco de Jérez.
Alleen wijnen uit die zone mogen de herkomstbenaming Jerez-Xérès-Sherry en Manzanilla-Sanlúcar de Barrameda dragen.
Marco de Jérez
In 1483 Jerez set ordinances on what the wine must be. Later came the Marco de Jérez zone.
Only wines from that zone may carry the origin names Jerez-Xérès-Sherry and Manzanilla-Sanlúcar de Barrameda.
Druiven en persing
Bijna alle Sherry is van Palomino. Moscatel en Pedro Ximénez komen in kleine hoeveelheden voor. Het zijn witte druiven.
Alleen de most van de eerste persing gaat naar Sherry. Druiven voor zoete wijn drogen minstens 48 uur in de zon.
Gisting gebeurt rond 23 graden Celsius. Begin december volgt de eerste classificatie, vóór de droesem eraf is.
Grapes and pressing
Almost all Sherry is Palomino. Moscatel and Pedro Ximénez appear in small amounts. They are white grapes.
Only the must from the first pressing goes to Sherry. Grapes for sweet wine dry at least 48 hours in the sun.
Fermentation is around 23 degrees Celsius. Early December comes the first classification, before the lees are removed.
Flor en solera
Vaten zijn voor ongeveer 85 procent gevuld. Op Palomino vormt flor, een dunne gistlaag. Die houdt lucht bij de gist, niet bij de wijn.
Bij Oloroso gaat extra alcohol erbij. Dan vormt geen flor. De wijn rijpt in contact met lucht.
Solera is de onderste rij vaten, klaar voor de fles. Daarboven liggen criaderas. Aftappen vult van boven naar beneden bij, zodat de stijl gelijk blijft. Sherry krijgt geen oogstjaar op het etiket.
Flor and solera
Casks are filled to about 85 percent. On Palomino a thin yeast film called flor forms. It keeps air with the yeast, not with the wine.
For Oloroso extra alcohol is added. Then no flor forms. The wine ages in contact with air.
Solera is the bottom row of casks, ready for bottling. Above it sit criaderas. Drawing off is topped up from above, so the style stays steady. Sherry carries no vintage on the label.
Stijlen
Fino rijpt minstens drie jaar, droog, met amandelsmaak, koel serveren.
Manzanilla komt alleen uit Sanlúcar de Barrameda, geler en fijner dan Fino, met bittere ondertoon.
Amontillado rijpt minstens vijf jaar, amber, hazelnoot. Oloroso minstens zeven jaar, stevig, noten. Palo Cortado is zeldzaam, droog, roodbruin.
Pale Cream is een gezoete Fino. Cream is een gezoete Oloroso. Pedro Ximénez is zoet van de gelijknamige druif, mahonie, rozijn.
Montilla wordt op dezelfde manier gemaakt, maar buiten het Marco de Jérez. Montilla is geen Sherry.
Styles
Fino ages at least three years, dry, with almond flavour, served cool.
Manzanilla comes only from Sanlúcar de Barrameda, yellower and finer than Fino, with a bitter note.
Amontillado ages at least five years, amber, hazelnut. Oloroso at least seven years, firm, nuts. Palo Cortado is rare, dry, reddish brown.
Pale Cream is a sweetened Fino. Cream is a sweetened Oloroso. Pedro Ximénez is sweet from the grape of the same name, mahogany, raisin.
Montilla is made the same way, but outside the Marco de Jérez. Montilla is not Sherry.
Serveren
Manzanilla, Fino en Pale Cream koel. Cream en Amontillado rond 14 graden Celsius. Oloroso, Palo Cortado en Pedro Ximénez rond 16 graden Celsius.
Sherry heeft een eigen glas, de copita. Dat is een kleine en smalle uitvoering van het wijnglas. Andere versterkte wijnen kunnen er ook uit worden gedronken.
Serving
Manzanilla, Fino and Pale Cream cool. Cream and Amontillado around 14 degrees Celsius. Oloroso, Palo Cortado and Pedro Ximénez around 16 degrees Celsius.
Sherry has its own glass, the copita. That is a small, narrow form of the wine glass. Other fortified wines can be drunk from it too.
