Twee redenen
Decanteren is het overschenken van wijn in een karaf of wijnglas. Er zijn twee redenen. Oude gerijpte wijn scheiden van het gevormde dépôt. Jonge wijn ronder en zachter maken.
Two reasons
Decanting is pouring wine into a carafe or glass. There are two reasons. To separate old aged wine from the dépôt that has formed. To make young wine rounder and softer.
Oude wijn
Oude, gerijpte wijnen kunnen in de loop der jaren dépôt hebben ontwikkeld. Dat dépôt bestaat uit bezonken kleurstoffen en mineralen, ook wel bezinksel genoemd. Met de huidige wijnmakerstechnieken komt dit steeds minder voor. Alleen klassieke wijnen en Vintage Port moeten mogelijk worden gedecanteerd.
Oudere wijnen zijn gevoelig voor oxidatie en kunnen smaak en geur verliezen als ze worden gedecanteerd. Decanteren is dan ook alleen toegestaan als het echt niet mogelijk is de wijn uit te schenken zonder het dépôt mee te laten komen.
Als een wijn in een rek of kist ligt, zet het bezinksel zich op de fleswand af. Bij het uitschenken kan dat mee komen. Dat is niet schadelijk, maar het is te vermijden door te decanteren. Vervoer de fles rustig en horizontaal, in dezelfde stand als in de kelder, naar de plek van decanteren. Plaats de fles rechtop en laat hem 24 uur rechtop staan, zodat het bezinksel naar de bodem zakt. De wijn went zo ook aan de omgevingstemperatuur. Het is ook mogelijk de wijn in een schenkmandje te leggen, zodat het dépôt zich niet hoeft te roeren.
Old wine
Old, aged wines can over the years have developed dépôt. That dépôt is settled colour compounds and minerals, also called sediment. With current winemaking this happens less and less. Only classic wines and Vintage Port may still need decanting.
Older wines are sensitive to oxidation and can lose taste and smell if decanted. Decanting is therefore only allowed when it is truly impossible to pour without bringing the dépôt along.
If a wine lies in a rack or case, sediment settles on the bottle wall. When pouring it can come along. That is not harmful, but it can be avoided by decanting. Carry the bottle calmly and horizontally, in the same position as in the cellar, to the place of decanting. Stand the bottle upright and leave it upright for 24 hours, so the sediment sinks to the bottom. The wine also accustoms itself to room temperature. It is also possible to lay the wine in a pouring basket, so the dépôt need not stir.
Jonge wijn
De smaak van jonge wijn, die nog gesloten is en veel tannine bevat, kan door decanteren veraangenamen. Decanteer de wijn in een karaf om lucht te geven. Dan treedt versnelde oxidatie op, waardoor de smaak van de jonge wijn kan verbeteren.
Young wine
The taste of young wine, still closed and high in tannin, can be made more pleasant by decanting. Decant the wine into a carafe to give it air. Faster oxidation then occurs, which can improve the taste of the young wine.
Wijze van decanteren
Zorg altijd voor een lichtbron, een kaars of een lamp, en plaats die op tafel. Neem een schone en droge karaf. Ontkurk de fles voorzichtig. Beweeg de fles zo min mogelijk en neem er rustig de tijd voor. Als de fles ontkurkt is, wordt de opening schoongemaakt met een servet of doekje. Neem de fles in de schenkhand en de karaf in de andere hand. Houd de fles bij het schenken voor of boven de lichtbron, zodat men ziet waar het dépôt zit. Schenk in alle rust langs de karafwand. Stop als de eerste droesem mee dreigt te komen.
How to decant
Always have a light source, a candle or a lamp, and place it on the table. Take a clean, dry carafe. Uncork the bottle carefully. Move the bottle as little as possible and take time. When the bottle is uncorked, clean the opening with a napkin or cloth. Take the bottle in the pouring hand and the carafe in the other. When pouring, hold the bottle in front of or above the light, so one sees where the dépôt sits. Pour calmly down the carafe wall. Stop when the first lees threaten to come along.
