Beaujolais and Nouveau
This is the grape from which Beaujolais is made. It is a distinctive wine: light, juicy and fruity, with in the Nouveau version a synthetic aroma of bananas and chewing gum. It should be drunk young. Beaujolais owes its light structure to a particular vinification. Gamay grapes go with the skins into a vat from which air has been removed with carbon dioxide. Juice inside the grape starts to ferment until the skin bursts from the built-up gas pressure. Grapes on the bottom are crushed by the weight of the others and ferment in the usual way. Some of the richer, fleshier Crus can, after five to six years’ rest, hold elements of a ripe Pinot Noir.
Granite and Loire
On the harsh granite slopes of Beaujolais, Gamay comes into its own. Beside standard Beaujolais and Beaujolais Villages there are ten villages theoretically able to make the best wines, Crus du Beaujolais. Each has its own wine area. Gamay is also found in the Loire valley, where it is used for Crémant de Loire, a pink sparkling wine.
