Keuze van materiaal
Bij wijnbereiden thuis is het materiaal minstens zo belangrijk als het recept. Wijn en most zijn zuur, bevatten alcohol en blijven lang in contact met vat of gereedschap. Sommige materialen reageren chemisch, geven metaalsmaak of versnellen oxidatie. Andere zijn veilig voor gisting en opslag. Je zoekt materialen die inert, zuurbestendig en zuurstofdicht zijn, of juist gecontroleerd een beetje zuurstof doorlaten, zoals eiken.
Choice of material
At home the material matters as much as the recipe. Wine and must are acid, hold alcohol and stay long in contact with vat or tools. Some materials react chemically, give a metal taste or speed oxidation. Others are safe for fermentation and storage. You want materials that are inert, acid-proof and oxygen-tight, or that let a little oxygen through in a controlled way, such as oak.
Emaille
Emaille op pannen en vaten lijkt inert, maar is riskant bij één kras of beschadiging. Onder de emaillelaag zit vaak ijzer of een ander metaal. Zure most of wijn komt dan in contact met dat metaal. Dat kan metaalsmaak, verkleuring en verstoring van de gisting geven. Alleen een volledig gaaf oppervlak is verantwoord. Bij twijfel kies je roestvrij staal, glas of voedselveilige kunststof.
Enamel
Enamel on pans and vats looks inert, but is risky with one scratch or chip. Under the enamel there is often iron or another metal. Acid must or wine then meets that metal. That can give a metal taste, discolouration and disturbed fermentation. Only a fully sound surface is sound. If in doubt choose stainless steel, glass or food-grade plastic.
Aluminium
Aluminium reageert met zuren in most en wijn, zoals wijnsteenzuur, appelzuur en citroenzuur. Het metaal lost gedeeltelijk op. Dat kan een metaalachtige smaak en troebelingen geven. Hogere gehalten kunnen de gisting vertragen of onregelmatig maken. Een deel van het aluminium verdwijnt later via de gistingskoek, maar contact vermijd je beter helemaal. Geen aluminium pannen, lepels of vaten voor wijn.
Aluminium
Aluminium reacts with acids in must and wine, such as tartaric, malic and citric acid. The metal dissolves in part. That can give a metallic taste and haze. Higher levels can slow fermentation or make it irregular. Some aluminium later leaves with the lees, but you do better to avoid contact altogether. No aluminium pans, spoons or vats for wine.
Koper
In de professionele kelder gebruikt men koper soms zeer beperkt om een geur van zwavelwaterstof te corrigeren. Op hobbyniveau is koper geen goed materiaal voor vaten of gereedschap met lang contact. Hogere gehalten geven troebelingen en een bittere, metalige smaak. Koper versnelt oxidatie. Vermijd koperen pannen, leidingen of vaten die direct most of wijn raken.
Copper
In a professional cellar copper is sometimes used very sparingly to correct a hydrogen-sulphide smell. At hobby level copper is not a good material for vats or tools with long contact. Higher levels give haze and a bitter, metallic taste. Copper speeds oxidation. Avoid copper pans, pipes or vats that touch must or wine directly.
Kunststof
Niet elk plastic vat is geschikt. Voedselveilige PET, HDPE en PP, vaak aangeduid met code twee, vier of vijf, zijn kort tot middellang veilig voor gisting en overgieten, als ze nieuw zijn en echt voor voeding. Voedselveilig sluit gerecycled plastic uit. In gerecycled kunststof kunnen restanten van microorganismen of chemische stoffen achterblijven. PVC en onbekende plastics vermijd je. Die kunnen weekmakers zoals ftalaten afgeven aan alcohol. Lang contact en warmte verhogen die migratie. Veel plastics laten meer zuurstof door dan glas, roestvrij staal of eiken. Dat bevordert oxidatie en vluchtige zuren. Voor de hoofdgisting: voedselveilige emmers of vaten van HDPE of PP, of glazen carboys. Niet voor rijping van maanden tot jaren.
Plastic
Not every plastic vat is suitable. Food-grade PET, HDPE and PP, often marked with code two, four or five, are safe for short to medium fermentation and racking if they are new and truly for food. Food-grade rules out recycled plastic. Recycled plastic can hold leftover microorganisms or chemicals. Avoid PVC and unknown plastics. They can shed plasticisers such as phthalates into alcohol. Long contact and heat raise that migration. Many plastics let more oxygen through than glass, stainless steel or oak. That favours oxidation and volatile acids. For primary fermentation: food-grade HDPE or PP buckets, or glass carboys. Not for ageing of months to years.
Glas
Glas is een van de beste materialen thuis. Het reageert niet met zuren of alcohol. Het is zuurstofdicht als de fles goed vol en afgesloten is. Het is makkelijk schoon te maken en je ziet de inhoud. Flessen en carboys van circa vijf tot vijfentwintig liter zijn uitstekend voor gisting en opslag. Glas is breekbaar en zwaar. Bij grote volumes is het onpraktisch. Roestvrij staal type 304 of 316 is dan beter voor pannen, tanks en gereedschap.
Glass
Glass is one of the best materials at home. It does not react with acids or alcohol. It is oxygen-tight if the bottle is well filled and closed. It is easy to clean and you see the contents. Bottles and carboys of about five to twenty-five litres are excellent for fermentation and storage. Glass is breakable and heavy. At large volumes it is impractical. Stainless steel type 304 or 316 is then better for pans, tanks and tools.
Houten vat
Hobbyisten gebruiken eiken vaten voor rijping en smaak. Eik geeft tannine en aroma's zoals vanille, kruid en toast. Het laat een beetje zuurstof door. Dat kan de wijn soepeler maken. Kleine vaten van twee tot twintig liter hebben veel houtoppervlak ten opzichte van het volume. De houtinvloed wordt snel sterk. Gebruik onbehandeld, voedselveilig eiken. Geen geverfd of geïmpregneerd hout. Vaten moeten zwellen en schoon blijven. Chemische schoonmaakmiddelen tasten tannine en houtstoffen aan. Bij zeer kleine vaten is overmatige hout- en oxidatie-invloed groot. Veel hobbyisten zetten daarom eiken chips of een spiraal in glas of roestvrij staal.
Wooden cask
Hobby makers use oak casks for ageing and flavour. Oak gives tannin and aromas such as vanilla, spice and toast. It lets a little oxygen through. That can make the wine softer. Small casks of two to twenty litres have a large wood surface relative to volume. The oak effect becomes strong fast. Use untreated, food-grade oak. No painted or impregnated wood. Casks must swell and stay clean. Chemical cleaners harm tannin and wood compounds. With very small casks oak and oxidation easily become too much. Many hobbyists therefore put oak chips or a spiral in glass or stainless steel.
