Kernartikel
Wijn in de supermarkt groeide uit van een serviceartikel tot een kernartikel. Het schap biedt smaken, landen en prijsklassen. Wijn schuift in de winkel op van droge kruidenierswaren naar de versafdeling, naast groente, brood en vlees.
Core product
Wine in the supermarket grew from a service item into a core product. The shelf offers tastes, countries and price classes. In the shop wine moves from dry groceries towards the fresh department, next to vegetables, bread and meat.
Fifo-principe
First in, first out betekent dat oudere flessen vooraan staan en nieuwe achteraan worden bijgezet. Zo verkoopt de winkel eerst wat het langst in magazijn of schap lag. Wijn uit het grootwinkelbedrijf heeft een soort uiterste houdbaarheid. Wit en rosé zijn gevoeliger dan rood.
Bij een jaargangwissel moet de oude oogst eerst uit het schap voordat de nieuwe jaargang vooraan komt. Hetzelfde principe geldt in de hele winkel, met extra nadruk bij verse producten en wijn.
Fifo principle
First in, first out means older bottles stand at the front and new ones are placed at the back. The shop thus sells first what has lain longest in warehouse or on the shelf. Wine from the grocery trade has a kind of best-before. White and rosé are more sensitive than red.
At a vintage change the old harvest must leave the shelf first before the new vintage comes to the front. The same principle holds throughout the shop, with extra weight on fresh products and wine.
Schap en etiket
Flessen staan zo dat het etiket leesbaar is en de klant kan vergelijken. Logische indeling helpt: wit bij wit, land bij land, streek bij streek, fris bij fris en soepel bij soepel.
Klanten vragen vaak om een droge witte zonder te veel zuur, om een Sancerre-achtige wijn uit Chili of om wijn bij de barbecue. Goed advies vraagt etiketkennis en het verhaal achter het etiket, niet alleen de fles in het schap.
Shelf and label
Bottles stand so the label is readable and the customer can compare. Logical layout helps: white with white, country with country, region with region, fresh with fresh and supple with supple.
Customers often ask for a dry white without too much acid, for a Sancerre-like wine from Chile or for wine with a barbecue. Good advice needs label knowledge and the story behind the label, not only the bottle on the shelf.
