Waar fouten vandaan komen
De meeste wijnfouten komen van slechte hygiëne, te veel zuurstof, verkeerde temperatuur of onzorgvuldig bottelen. In een traditionele kelder bestrijd je ze met schoon werken, sulfiet, filtratie en stabilisatie. Bij natuurwijn kiest men bewust voor weinig ingreep. Dan kan hetzelfde kenmerk risico zijn, of stijl.
Where faults come from
Most wine faults come from poor hygiene, too much oxygen, the wrong temperature or careless bottling. In a conventional cellar one fights them with cleanliness, sulphite, filtration and stabilisation. In natural wine one chooses little intervention. Then the same trait can be a risk, or a style.
Bedorven most
Oorzaak: rotte of beschimmelde druiven, te lang zuurstof vóór de gisting, vuile pers of vaten. De most ruikt muffig, naar rot fruit of azijn. De gisting start traag of ongelijk. Preventie: gezonde druiven, snel werken, sulfiet, strikte hygiëne.
Spoiled must
Cause: rotten or mouldy grapes, too long with oxygen before fermentation, a dirty press or vats. The must smells musty, of rotten fruit or vinegar. Fermentation starts slowly or unevenly. Prevention: healthy grapes, work fast, sulphite, strict hygiene.
Troebele wijn
Oorzaak: te weinig klaring, nagisting in de fles, eiwit of wijnsteen, microbiële groei. De wijn ziet melkachtig of wazig, kan bezinksel en nare geuren geven. Preventie: goed klaren, sulfiet, bij zoete wijn sorbaat, koude stabilisatie tegen wijnsteen, hygiëne. Ongefilterd bottelen is een andere keuze, met extra risico.
Hazy wine
Cause: too little fining, referment in bottle, protein or tartar haze, microbial growth. The wine looks milky or cloudy, can drop sediment and off-odours. Prevention: fine well, sulphite, sorbate with sweet wine, cold stabilisation against tartar, hygiene. Unfiltered bottling is another choice, with extra risk.
Te veel sulfiet
Te hoge dosis bij most of botteling. Geur van gebroken lucifer of zwavel. Aroma’s vallen dicht. Beluchten, decanteren, tijd geven. Bij een extreme overdosis is de wijn soms niet meer te redden.
Too much sulphite
Too high a dose at must or bottling. Smell of struck match or sulphur. Aromas shut down. Aerate, decant, give time. With an extreme overdose the wine is sometimes beyond rescue.
Infectie
Azijnsteek: Acetobacter of Gluconobacter zetten alcohol om in azijnzuur bij te veel zuurstof. Geur van azijn of ethylacetaat, zoals nagellakremover. Smaak scherp en wrang. Brettanomyces is een wilde gist. Geur van stal, paard, zweet, leer of medicijn. In lage dosis soms complexiteit. In hoge dosis overheerst het fruit. Melkzuurbacteriën op het verkeerde moment geven troebeling, muffe geuren en ongewenste nagisting.
Infection
Volatile acidity: Acetobacter or Gluconobacter turn alcohol into acetic acid with too much oxygen. Smell of vinegar or ethyl acetate, like nail-polish remover. Taste sharp and harsh. Brettanomyces is a wild yeast. Smell of stable, horse, sweat, leather or medicine. In a low dose sometimes complexity. In a high dose it covers the fruit. Lactic bacteria at the wrong moment give haze, musty smells and unwanted referment.
Kurkfout, TCA
Trichlooranisol in de kurk, uit schimmels en chloorverbindingen. Muffe geur van natte kelder, nat karton, schimmel of oude krant. Fruit valt weg, de wijn smaakt dood. Fles terug of weg. Stukjes kurk in het glas zijn geen kurkfout.
Cork taint, TCA
Trichloroanisole in the cork, from moulds and chlorine compounds. Musty smell of wet cellar, wet cardboard, mould or old newspaper. Fruit falls away, the wine tastes dead. Return the bottle or discard it. Bits of cork in the glass are not this fault.
Onbedoelde mousse
Nagisting in de fles door restsuiker en actieve gist of bacteriën, te weinig stabilisatie. Lichte prik of sterke koolzuur, troebeling, soms gevaarlijke druk. Preventie: eerst droog vergisten, sulfiet en sorbaat, eventueel sterielfiltreren vóór bottelen.
Unintended sparkle
Referment in bottle from residual sugar and active yeast or bacteria, too little stabilisation. Light prickle or strong carbon dioxide, haze, sometimes dangerous pressure. Prevention: ferment dry first, sulphite and sorbate, sterile-filter before bottling if needed.
Natuurwijn
Natuurwijn, vin nature, zoekt een kale expressie van druif en plek, met weinig technische correctie. Vaak biologische of biodynamische druiven, handpluk. Spontane gisting met wilde gisten. Geen of weinig sulfiet, soms circa dertig tot zeventig milligram per liter totaal, soms niets toegevoegd. Geen chaptalisatie, geen aanzuren, geen enzymen, geen zware filtratie. Daardoor zijn afwijkingen die elders fout heten makkelijker: troebeling, lichte mousse, Brett, reductie, vluchtige zuren. In lage mate zien sommigen dat als levendigheid. In hoge mate blijft het storend.
Natural wine
Natural wine, vin nature, seeks a bare expression of grape and place, with little technical correction. Often organic or biodynamic grapes, hand-picked. Spontaneous ferment with wild yeasts. Little or no sulphite, sometimes about thirty to seventy milligrams per litre total, sometimes none added. No chaptalisation, no acidification, no enzymes, no heavy filtration. Faults elsewhere named are then easier: haze, light sparkle, Brett, reduction, volatile acidity. In a low degree some see that as life. In a high degree it still disturbs.
Fout of stijl
Oxidatie onbedoeld: sherry-achtig en vlak. Bewust, zoals in de Jura of bij Sherry, geeft het een gewaardeerde stijl. Troebeling kan infectie zijn, of ongefilterde wijn. Brett in lage mate: leer en kruid. In hoge mate: fout. De grens hangt af van intensiteit en wat de maker belooft.
Fault or style
Oxidation by accident: sherry-like and flat. On purpose, as in the Jura or with Sherry, it gives a valued style. Haze can be infection, or unfiltered wine. Brett in a low degree: leather and spice. In a high degree: a fault. The line depends on intensity and what the maker promises.
