Schors van de kurkeik
Kurk sloten Egyptenaren, Grieken en Romeinen al af tegen buitenlucht. Na de val van Rome ging die kunst verloren. Rond 1500 kwamen weer taps toelopende kurken in de fles. Eerst staken zij boven de hals uit. De flesvorm paste toen nog niet bij liggend bewaren. De kurk moet vochtig blijven, anders krimpt hij en komt lucht binnen.
Kurk komt van de bast van de kurkeik, vooral in Portugal. De boom groeit snel. Elke vijf tot acht jaar kan de loszittende laag eraf. De boom sterft niet. Hij maakt een nieuwe laag. Tien of elf keer oogsten is mogelijk.
Ronde platen worden geplet tot rechte platen, gedroogd, uitgesneden en gekookt. Koken bevordert de elasticiteit. Kurken worden met een holle boor uit de plak geboord. Duurste kurken worden streng gecontroleerd. Zwarte nerven gaan eraf. Soms komt er een dunne plastic laag op.
Bark of the cork oak
Egyptians, Greeks and Romans already sealed wine from outside air with cork. After the fall of Rome that craft was lost. Around 1500 tapered corks returned in the bottle. At first they stuck above the neck. The bottle shape did not yet suit lying storage. The cork must stay moist, otherwise it shrinks and air enters.
Cork comes from the bark of the cork oak, especially in Portugal. The tree grows fast. Every five to eight years the loose layer can come off. The tree does not die. It makes a new layer. Ten or eleven harvests are possible.
Round plates are flattened into straight plates, dried, cut and boiled. Boiling aids elasticity. Corks are bored from the slab with a hollow drill. The dearest corks are strictly checked. Black veins come off. Sometimes a thin plastic layer is added.
Kurksmaak en kristallen
Kurken moeten gesteriliseerd worden. Insecten leven in de schors en leggen eieren. Schimmels in de schors kunnen een duffe smaak geven. Meestal ontstaat kurksmaak door verkeerde behandeling in de kelder. Bottelaars weken kurken soms een nacht in zwaveldioxide. Samen met gezwavelde flessen en restsuiker kan zwavelwaterstof ontstaan, die de poreuze kurk opneemt. Ook een vochtige, schimmelige opslag van kurken speelt mee. Meeldauw of oud DDT-gebruik kan schimmelsmaak bevorderen.
Een kurkmot kan eieren in de kurk leggen. Rupsen graven naar de wijn, sterven in de alcohol, lucht komt bij de wijn en hij verzuurt. Vroeger lakte men de bovenkant van hals en kurk. Dan kwam er helemaal geen zuurstof meer bij. Wijn heeft een beetje lucht nodig, die door een gezonde kurk heen kan. Een kurk is vooral nodig bij wijnen die zich in de fles nog moeten ontwikkelen. Schroefdoppen werken goed, maar het traditionele cachet ontbreekt.
Na het openen zijn soms glinsterende kristallen te zien aan het natte deel van de kurk. Zij vormen zich uit wijnsteenzuur. Zij kunnen ook in de wijn of in het bezinksel zitten. Zij zijn smaakloos en ongevaarlijk.
Cork taint and crystals
Corks must be sterilised. Insects live in the bark and lay eggs. Moulds in the bark can give a dull taste. Cork taint usually comes from wrong handling in the cellar. Bottlers sometimes soak corks a night in sulphur dioxide. Together with sulphited bottles and residual sugar, hydrogen sulphide can form, which the porous cork absorbs. Damp, mouldy storage of corks also plays a part. Mildew or old DDT use can promote a mouldy taste.
A cork moth can lay eggs in the cork. Caterpillars dig towards the wine, die in the alcohol, air reaches the wine and it turns sour. In the past the top of neck and cork was lacquered. Then no oxygen reached the wine at all. Wine needs a little air that can pass through a healthy cork. A cork is mainly needed for wines that must still develop in bottle. Screw caps work well, but the traditional cachet is missing.
After opening, glittering crystals are sometimes seen on the wet part of the cork. They form from tartaric acid. They can also sit in the wine or in the sediment. They are tasteless and harmless.
De trekker
De ideale kurkentrekker heeft een spiraal van minstens vierenhalve centimeter met een holle as. Er zijn ook pneumatische trekkers, die via een holle naald koolzuurgas onder de kurk spuiten. Door de druk komt de kurk omhoog. Duitse handboeken waarschuwen: gebruik die trekker niet bij een Bocksbeutel. De platte kant van de fles kan de druk niet aan.
The corkscrew
The ideal corkscrew has a spiral of at least four and a half centimetres with a hollow shaft. There are also pneumatic pullers that inject carbon dioxide under the cork through a hollow needle. Pressure lifts the cork. German handbooks warn: do not use that puller on a Bocksbeutel. The flat side of the bottle cannot take the pressure.
