Van vat naar fles
Bottelen is de laatste grote stap: de wijn gaat van vat of ballon naar de fles. Daar rijpt hij verder, of hij is klaar om te drinken. Hygiëne, de afsluiting en het moment van bottelen sturen hoe de wijn zich ontwikkelt.
From vessel to bottle
Bottling is the last large step: the wine goes from vat or demijohn into the bottle. There it ages further, or it is ready to drink. Hygiene, the closure and the moment of bottling steer how the wine develops.
Brandschone flessen
Flessen, slangen, pompen en vulgerei moeten brandschoon zijn. Een klein beetje vuil kan een hele batch bederven. Gebruikte flessen spoel je zo snel mogelijk na ledigen. Was daarna met soda of trisoda, één tot vijf procent. Spoel na met water, eventueel citroenzuur en sulfiet, tot slot heet water. Laat flessen ondersteboven uitlekken. Bewaar droog, liefst in dozen, tot net voor gebruik. Controleer op barsten, oude resten en vuil in de hals. Beschadigde flessen niet gebruiken. Hevelslang, vulnaald en kurkapparaat krijg je op dezelfde manier schoon.
Spotless bottles
Bottles, hoses, pumps and filling gear must be spotless. A little dirt can spoil a whole batch. Rinse used bottles as soon as they are empty. Then wash with soda or trisodium phosphate, one to five percent. Rinse with water, optionally citric acid and sulphite, and last with hot water. Drain bottles upside down. Store dry, preferably in boxes, until just before use. Check for cracks, old residue and dirt in the neck. Do not use damaged bottles. Siphon hose, filling wand and corker get the same cleaning.
Kurk of schroefdop
Natuurkurk is traditioneel. Die laat zeer weinig zuurstof door. Dat kan bewaarwijn helpen. Nadelen: kans op kurkfout door TCA, wisselende zuurstofdoorlaat, kurkentrekker nodig, liggende opslag zodat de kurk niet uitdroogt. Schroefdop, zoals Stelvin, sluit gelijkmatig en dicht. Minder oxidatie, geen TCA. Moderne doppen laten ook miniem zuurstof toe, zodat bewaarwijn kan rijpen. Geen kurkentrekker, makkelijk opnieuw dicht, fles mag rechtop. Kunststofkurk en glazen stop bestaan ook. Thuis is schroefdop vaak praktischer. Voor cadeau of traditie kiest men soms kurk.
Cork or screwcap
Natural cork is traditional. It lets through very little oxygen. That can help wines meant for ageing. Drawbacks: risk of cork taint from TCA, varying oxygen ingress, a corkscrew needed, storage on the side so the cork does not dry. A screwcap, such as Stelvin, seals evenly and tight. Less oxidation, no TCA. Modern caps also let in a trickle of oxygen, so ageing wines can develop. No corkscrew, easy to reseal, the bottle may stand upright. Plastic corks and glass stoppers exist too. At home a screwcap is often more practical. For a gift or tradition one sometimes still chooses cork.
Vullen
Werk rustig en met weinig zuurstof. Laat de wijn via een slang in de fles lopen, liefst vanaf de bodem, tegen turbulentie. Houd ongeveer één tot anderhalve centimeter tussen wijn en kurk, de vrije ruimte in de hals, ullage. Week kurken niet te lang. Leg ze op een schone doek. Vermijd vuil op het deel dat in de wijn komt. Pers met een kurkapparaat. Zet gevulde flessen enkele uren rechtop, zodat de kurk ontspant. Daarna liggend bij kurk. Bij schroefdop: schone droge hals, dop erop. Daarna rechtop of liggend.
Filling
Work calmly and with little oxygen. Let the wine run into the bottle through a hose, preferably from the bottom, against turbulence. Leave about one to one and a half centimetres between wine and cork, the headspace, ullage. Do not soak corks too long. Lay them on a clean cloth. Keep dirt off the part that enters the wine. Press with a corker. Leave filled bottles upright for a few hours so the cork relaxes. Then on the side with cork. With a screwcap: clean dry neck, cap on. Then upright or on the side.
Troebel afvullen
Sommige makers vullen bewust troebel, bijvoorbeeld natuurwijn of sur lie. Meer textuur en aroma uit fijne lees, minder filtratie. Risico: nagisting in de fles, troebelheid, koolzuur, geur- of smaakfouten als er nog suiker of actieve microben zijn. Extra aandacht voor stabiliteit. Geen restsuiker, of wel sulfiet en sorbaat bij zoete wijn. Schone flessen, weinig zuurstof.
Bottling cloudy
Some makers bottle cloudy on purpose, for example natural wine or sur lie. More texture and aroma from fine lees, less filtration. Risk: referment in bottle, haze, carbon dioxide, odour or flavour faults if sugar or active microbes remain. Extra care for stability. No residual sugar, or sulphite and sorbate with sweet wine. Clean bottles, little oxygen.
Élevage
Élevage is de opvoeding van de wijn tussen het einde van de gisting en het bottelen, en daarna in de fles. Op vat of in tank integreren kleur, tannine en aroma. Men controleert, hevelt, vult aan, ouillage, en beschermt tegen oxidatie en microben. De maker kiest wanneer de wijn af is voor de fles. Na bottelen gaat de ontwikkeling door, koel, donker, bij constante temperatuur, met een goede sluiting.
Élevage
Élevage is the raising of the wine between the end of fermentation and bottling, and then in bottle. In cask or tank colour, tannin and aroma come together. One checks, racks, tops up, and protects against oxidation and microbes. The maker chooses when the wine is ready for bottle. After bottling development continues, cool, dark, at a steady temperature, with a sound closure.
