Extract
Het verschil tussen lichte en vollere wijn hangt sterk af van extract, de opgeloste stoffen in de wijn.
Door te snoeien blijft het aantal trossen per stok laag. Voeding uit de bodem gaat naar minder druiven. Die druiven zijn rijker.
Zo ontstaan dikke, volle wijnen met veel extract en vaak veel tannine. Die vragen tijd voor ze op dronk zijn. Vaak rijpen ze op deels nieuw eiken. Voorbeelden zijn Grands Crus Classés uit Bordeaux, zoals Château Mouton Rothschild en Château Latour, en Barolo in Italië.
Extract
The difference between light and fuller wine depends strongly on extract, the dissolved matter in the wine.
Pruning keeps the number of bunches per vine low. Soil nutrients go to fewer grapes. Those grapes are richer.
That yields thick, full wines with much extract and often much tannin. They need time before they are ready to drink. They often age in partly new oak. Examples are Grands Crus Classés from Bordeaux, such as Château Mouton Rothschild and Château Latour, and Barolo in Italy.
Rendement
Bij eenvoudiger wijn ligt de nadruk op hoog rendement, een grote oogst. Er is relatief veel wijn, maar de druiven lenen zich niet voor krachtige topwijn.
In de kelder blijft fruit voorop. Rijping gebeurt op roestvrij staal, niet op kostbaar eiken. Eenvoudige wijnen hebben weinig extract, alcohol en glycerol. Ze zijn dunner in het glas.
In Zuid-Afrika, Australië, Chili en Californië ontstaan minder lichte wijnen dan in de klassieke Europese landen. Warmte en zon geven meer suiker in de druif, dus meer alcohol en zwaardere wijn.
Yield
Simpler wine aims at high yield, a large harvest. There is relatively much wine, but the grapes do not suit powerful top wine.
In the cellar fruit stays in front. Ageing is in stainless steel, not in costly oak. Simple wines have little extract, alcohol and glycerol. They feel thinner in the glass.
South Africa, Australia, Chile and California produce fewer light wines than the classic European countries. Heat and sun give more sugar in the grape, hence more alcohol and heavier wine.
Lichte wijn
Lichte wijn houdt minder lang in de kelder. De gisting is kort. De druiven zijn op hoeveelheid geteeld. Voor het persen gaan de stelen er vaak af, zodat tannine laag blijft.
Fruit is het frist bij een jonge fles. Drink lichte wijn jong. Alcohol ligt tussen 10 en 12 procent.
Voorbeelden: Beaujolais, Bardolino, of een eenvoudige tafelwijn of landwijn. Die wijnen mogen iets koeler. Ze passen bij gevogelte, salade of wit vlees. Beaujolais Primeur, Côtes du Ventoux, Vin de pays d'Oc en tafelwijn horen in deze hoek.
Light wine
Light wine keeps less long in the cellar. Fermentation is short. The grapes were grown for quantity. Stems often come off before pressing, so tannin stays low.
Fruit is freshest in a young bottle. Drink light wine young. Alcohol sits between 10 and 12 percent.
Examples: Beaujolais, Bardolino, or a simple table or country wine. Those wines may be a little cooler. They suit poultry, salad or white meat. Beaujolais Primeur, Côtes du Ventoux, Vin de pays d'Oc and table wine sit in this corner.
Volle wijn
Volle wijn hoeft niet binnen een jaar op, en hoeft ook niet eerst lang te ouderen. Het karakter is evenwichtig. De wijn is niet zuur of wrang, heeft meer body dan de lichtste wijnen, en is toch snel op dronk.
Dit type ontstaat in elk wijnland, waaronder Zuid-Afrika, Australië, Chili en Californië, en in veel bekende Franse wijnen.
In Europa wisselen goede en mindere oogstjaren. In Californië is het klimaat gelijkmatiger, waardoor de kwaliteit van jaar tot jaar dichter bij elkaar ligt.
Full wine
Full wine need not be finished within a year, and need not age for long first. The character is balanced. The wine is not sharp or harsh, has more body than the lightest wines, and is still soon ready to drink.
This type is made in every wine country, including South Africa, Australia, Chile and California, and in many well-known French wines.
In Europe good and lesser harvest years alternate. In California the climate is more even, so quality from year to year sits closer together.
