Egyptische farao’s lieten slaven al rond 2500 voor Christus druiven met de voeten uitpersen. Tot in de jaren veertig van de twintigste eeuw kwam die methode nog voor.
Grieken en Romeinen gebruikten enorme boompersen. Een zware balk duwt een plaat omlaag. Een kooi van houten latten houdt de druiven onder de persplaat.
Sinds omstreeks 1835 zijn hydraulische persen in gebruik. De persrichting was vroeger van boven naar beneden. Nu is hij horizontaal. De laatste ontwikkeling is de luchtdrukpers. Druiven worden tegen de buitenwand gedrukt. De perstijd wordt korter. De most komt minder lang met zuurstof in aanraking. Dat is beter voor de kwaliteit.

Egyptian pharaohs already had slaves press grapes with their feet around 2500 before Christ. Until the 1940s that method still occurred.
Greeks and Romans used huge beam presses. A heavy beam pushes a plate down. A cage of wooden slats holds the grapes under the plate.
Hydraulic presses have been in use since about 1835. The press direction used to be from top to bottom. Now it is horizontal. The latest development is the air press. Grapes are pressed against the outer wall. Press time becomes shorter. The must meets oxygen for less time. That is better for quality.
