Een natuurlijk proces
Vinificatie is wijn maken: het begeleiden van een natuurlijk proces. Gisting kan in het wild gebeuren. Rijpe druiven vallen, barsten open, sap raakt gist op de schil en lucht. Suikers worden koolzuur en alcohol.
In de kelder gebeurt hetzelfde, onder toezicht van de caviste, de keldermeester. Die schept optimale voorwaarden om die gisting heen. Druiven gaan snel en gekoeld naar de pers, zodat zij niet bruin en muf worden.
A natural process
Vinification is making wine: guiding a natural process. Fermentation can happen in the wild. Ripe grapes fall, split open, juice meets yeast on the skin and air. Sugars become carbon dioxide and alcohol.
In the cellar the same happens, under the caviste, the cellar master. That person sets optimal conditions around the ferment. Grapes go quickly and cooled to the press so they do not turn brown and musty.
Pasteur en most
Zonder gisting is geen alcohol mogelijk. Louis Pasteur, 1822 tot 1895, ontdekte gisting als microbiologisch verschijnsel. Gisten zijn eencellige organismen op de schil. Afgesloten van lucht brengen zij, tussen de tien en tweeëndertig graden, de gisting op gang.
Is het druivensuikergehalte te gering, dan mag men maximaal twee procent alcohol toevoegen. In de meeste Franse districten is chaptaliseren, suiker bijmengen, wettelijk toegestaan. Die term staat ook op de Verdieping over kijken naar rode wijn.
Het gistingsproces kan men vroeg stoppen met sulfiet. Gistcellen sterven dan meteen. In bijna alle wijnen is sulfiet bijgemengd. Net als tannine is het een conserveermiddel. Tannine smaakt droog en stroef. Kenners zeggen dan: nog niet op dronk. Veel rode wijnen rusten nog jaren tot die smaak wegtrekt. Alleen de rode Beaujolais Primeur hoeft twee tot veertien dagen te liggen.
Pasteur and must
Without fermentation no alcohol is possible. Louis Pasteur, 1822 to 1895, discovered fermentation as a microbiological phenomenon. Yeasts are single-cell organisms on the skin. Shut off from air they start fermentation between ten and thirty-two degrees.
If grape sugar is too low, at most two percent alcohol may be added. In most French districts chaptalisation, adding sugar, is legally allowed. That term is also on the Background page about looking at red wine.
Fermentation can be stopped early with sulphite. Yeast cells then die at once. Almost all wines have sulphite added. Like tannin it is a preservative. Tannin tastes dry and harsh. Experts then say: not yet ready to drink. Many red wines rest for years until that taste fades. Only red Beaujolais Primeur needs two to fourteen days.

Gisting vroeg stoppen door alcohol toe te voegen laat meer suiker achter. Dat gebeurt onder meer bij Port.
In de most zitten per liter, afhankelijk van het ras, ongeveer achthonderd gram water, vijftig tot honderdvijftig gram suikers, honderdvijftig tot driehonderd gram zouten, zuren, aminozuren, eiwitten, kleurstoffen en vitaminen. Onderzoek vond ruim tweehonderd stoffen in wijn.
In een moderne makerij staan hoge roestvrijstalen tanks, ladders, slangen en pompen. Computers geven per tank de temperatuur. Heftrucks rijden met vaten. Oenologen sturen mee. Sommigen gisten warmer, gebruiken natuurlijke gist en filteren niet. Anderen kiezen de veilige weg. Zo blijft de wijncultuur divers. Dankzij kennis en apparatuur komen slechte oogstjaren nauwelijks meer voor.

Stopping fermentation early by adding alcohol leaves more sugar. That happens among other wines with Port.
Must holds per litre, depending on the variety, about eight hundred grams of water, fifty to one hundred and fifty grams of sugars, one hundred and fifty to three hundred grams of salts, acids, amino acids, proteins, colour and vitamins. Research found well over two hundred substances in wine.
In a modern winery stand tall stainless tanks, ladders, hoses and pumps. Computers show temperature per tank. Forklifts move barrels. Oenologists steer along. Some ferment warmer, use natural yeast and do not filter. Others take the safe path. Wine culture thus stays diverse. With knowledge and equipment poor harvest years barely occur any more.
