Waarom de vorm telt
Wie wijn volledig tot zijn recht wil laten komen, let naast temperatuur en bezinksel op het glas. Omdat kleur bij het drinken hoort, is een wijnglas helder en doorzichtig. De geur, het bouquet, mag niet te snel vervluchtigen. Daarom loopt het glas iets taps toe. Walsen zonder morsen vraagt een kelk die niet te klein is.
Why shape matters
Anyone who wants wine at its best watches the glass as well as temperature and sediment. Because colour belongs to drinking, a wine glass is clear. The smell, the bouquet, must not vanish too fast. So the glass tapers a little. Swirling without spilling needs a bowl that is not too small.

De hand verwarmt de kelk en dus de wijn. Een koude wijn kan wel handwarm worden gemaakt door de steel tussen ringvinger en middelvinger te nemen en met de hand de kelk te verwarmen.
How to hold
On French estates it used to be the custom, when tasting, to pass one glass around the group. Those tasters were usually growers from nearby. Holding the glass by the foot made passing easier. From that comes the rule that one holds a glass by the foot. In most cases the drinker holds the stem. Never the bowl. The hand then sits too close to the opening, so the bouquet gains an unwanted note. Fingerprints remain. The hand warms the bowl and thus the wine. A cold wine can be hand-warmed by taking the stem between ring finger and middle finger and warming the bowl with the hand.
Tips
Een goed wijnglas is kleurloos en helder. De kelk loopt naar boven taps toe, zodat het bouquet langer blijft. De steel is lang genoeg om het glas beet te pakken. Het glas is als geheel stabiel en wordt niet topzwaar als de wijn is ingeschonken.
Een plastic beker is ongeschikt. Een goed wijnglas heeft een voet, een niet te korte steel en een tulpvormige kelk. Die kelk houdt het bouquet vast en leidt het geconcentreerd naar de neus. Is de opening te breed, dan verdwijnt het bouquet te snel. Schenk niet te vol en gun het bouquet ruimte. De smaak komt beter tot zijn recht als de kelk dun is. Elke wijnstreek heeft eigen glazen.
Tips
A good wine glass is colourless and clear. The bowl tapers upward so the bouquet lasts longer. The stem is long enough to hold. The glass as a whole is stable and does not become top-heavy when filled.
A plastic cup is unsuitable. A good wine glass has a foot, a stem that is not too short, and a tulip bowl. That bowl holds the bouquet and leads it concentrated to the nose. If the opening is too wide, the bouquet vanishes too fast. Do not fill too high, and give the bouquet space. Taste comes through better if the bowl is thin. Each wine region has its own glasses.

De kelk van een goed wijnglas bevat minimaal 23 centiliter. In een glas van die grootte komen kleur en geur tot hun recht, en walsen gaat makkelijk. In betere restaurants schenkt men vaak in grote glazen, omdat veel mensen gevoelsmatig lekkerder drinken uit een groter glas.
De International Standards Organisation, ISO, ontwikkelde het ideale proefglas. De kelk is 100 millimeter hoog. Steel en voet samen zijn 55 millimeter. Het totale glas is dus 155 millimeter hoog. In een glas met die afmetingen komen bijna alle rode en witte wijnen tot hun recht.
Rode wijn heeft meer ruimte nodig om te ademen. Daarom schenkt men rode wijn in grotere glazen dan witte. Wie beide bij een diner schenkt, is het beste af met twee verschillende wijnglazen.
Size and ISO tasting glass
The bowl of a good wine glass holds at least 23 centilitres. In a glass that size colour and smell come through, and swirling is easy. Better restaurants often pour into large glasses, because many people feel they drink more pleasantly from a larger glass.
The International Standards Organisation, ISO, developed the ideal tasting glass. The bowl is 100 millimetres high. Stem and foot together are 55 millimetres. The whole glass is therefore 155 millimetres high. In a glass of those dimensions almost all red and white wines come into their own.
Red wine needs more space to breathe. So red wine is poured into larger glasses than white. Anyone serving both at dinner is best with two different wine glasses.
