De rist is de tros zonder vruchten. Die stelen maken tot ongeveer zeven procent van het gewicht van de geplukte druiven uit. De rist geeft stevigheid door tannine. Tannine, looistof, zit in rist, pitten en schil. Alleen het looizuur dat tijdens de gisting uit de schillen oplost, laat de wijn zich ontplooien en goed rijpen.
Druivensap is over het algemeen kleurloos. Looizuren en kleurstoffen in de schil geven rode wijn zijn kleur. De schil is bedekt met een wasachtig laagje, rijp of waas. Daarin zit een reserve aan gistculturen. Die zetten met enzymen de alcoholische gisting in gang.
Het vruchtvlees is water, suikers en zuren. Het maakt tachtig tot negentig procent van het gewicht van de tros uit.
De pitten mogen bij persen of treden niet stuk. Tannine en olieachtige stoffen zouden de wijn te bitter maken.
Four parts
The rachis is the bunch without fruit. Those stems make up to about seven percent of the weight of picked grapes. The rachis gives firmness through tannin. Tannin, the astringent, sits in rachis, pips and skin. Only the tannin that dissolves from the skins during fermentation lets the wine unfold and ripen well.
Grape juice is generally colourless. Tannins and colour in the skin give red wine its colour. The skin is covered with a waxy bloom, called bloom or bloom-dust. In it sits a reserve of yeast cultures. With enzymes they start alcoholic fermentation.
The pulp is water, sugars and acids. It makes eighty to ninety percent of bunch weight.
Pips must not break during pressing or treading. Tannin and oily substances would make the wine too bitter.
