Koel en snel
Bij witte wijn gaat het om de delicate smaak van de druif. Zorgvuldig werken en een koele temperatuur horen daarbij.
In grote lijnen lijkt de vinificatie op die van rood. Het verschil zit vooraan. Witte druiven worden meteen na de pluk geperst. Schillen weken zelden mee. De most gist zoals bij rood, maar koeler. Vaak op kleinere fusten in plaats van grote kuipen. De temperatuur mag nooit boven de twintig graden komen. Meestal ligt hij lager. De gisting vertraagt. De wijn krijgt meer geur en smaak.
Cool and fast
With white wine the delicate flavour of the grape matters. Careful work and a cool temperature belong with that.
In outline vinification resembles that of red. The difference is at the start. White grapes are pressed right after picking. Skins rarely soak with the juice. Must ferments as with red, but cooler. Often in smaller casks instead of large vats. Temperature must never rise above twenty degrees. Usually it lies lower. Fermentation slows. The wine gains more aroma and flavour.
Zuren
De zuurgraad in wit is vaak hoger dan in rood. Wat tannine voor rood is, zijn zuren voor wit. Van witte wijn verwacht men frisheid. Hoger zuur komt van ras en klimaat. Men kan vroeger plukken, vóór volle rijpheid. Of men laat de malolactische gisting slechts gedeeltelijk lopen, zodat meer geprononceerde zuren blijven.
Te veel appelzuur kan men met lactobacillus omzetten in zachter melkzuur. Dat doet men vooral bij rood. De meeste makers willen de frisse, zure smaak van wit behouden.
Acids
Acidity in white is often higher than in red. What tannin is for red, acids are for white. Freshness is expected of white wine. Higher acid comes from variety and climate. One can pick earlier, before full ripeness. Or one lets malolactic fermentation run only in part, so more pronounced acids remain.
Too much malic acid can be turned with lactobacillus into softer lactic acid. That is done mainly with red. Most makers want to keep the fresh, acid taste of white.
Hout of tank
Witte wijnen zijn zelden gebaat bij lange lagering op hout. De meeste zijn het mooist met hun frisse fruitsmaak. Hout kan die smaken overstemmen of de wijn te snel laten verouderen. Veel wit gaat in luchtdichte tanks en zo snel mogelijk de fles in na stabilisatie.
Alleen hoge witte wijnen van één ras, vooral Chardonnay, kunnen gebaat zijn bij lagering op fust. Zij stabiliseren, verdiepen en nemen geur van oxiderend eiken op.
Aanpassing van smaak hoort vóór de gisting. Toezichthouders stellen strikte regels. Suiker vóór de gisting verhoogt alcohol, niet de zoetheid van de afgewerkte wijn. Zoete technieken zoals Süssreserve staan op de Verdieping zoete wijn.
Oak or tank
White wines rarely benefit from long oak ageing. Most are finest with their fresh fruit flavour. Oak can drown those flavours or age the wine too fast. Much white goes into airtight tanks and into bottle as soon as possible after stabilisation.
Only high whites of one variety, especially Chardonnay, can benefit from cask ageing. They stabilise, deepen and take aroma from oxidising oak.
Taste adjustment belongs before fermentation. Supervisors set strict rules. Sugar before fermentation raises alcohol, not the sweetness of the finished wine. Sweet techniques such as Süssreserve are on the sweet wine Background page.
