Wanneer drinken
Niet elke wijn is gemaakt om oud te worden. Veel wijnen zijn op hun best binnen één tot drie jaar na de oogst. Alleen wijnen met voldoende structuur hebben bewaarpotentieel: zuur, tannine, alcohol en extract in balans. Dan kan de fles jaren tot decennia rijpen en complexer worden.
When to drink
Not every wine is made to grow old. Many wines are at their best within one to three years after harvest. Only wines with enough structure have cellar potential: acid, tannin, alcohol and extract in balance. Then the bottle can age for years to decades and grow more complex.
Rijpen in de fles
In de fles gaan langzame chemische reacties. Rode wijn verliest paarse tinten en krijgt meer steenrood of bruine randen. Witte wijn wordt dieper goud. Primair fruit en bloemen maken plaats voor gedroogd fruit, leer, tabak, paddenstoel of honing. Tannines polymeriseren en voelen zachter. Zuren integreren. De wijn wordt complexer, maar verliest frisheid. Lichte, fruitige wijnen worden vaak vlakker als je ze te lang bewaart.
Bottle ageing
In bottle, slow chemical reactions take place. Red wine loses purple tones and gains brick-red or brown rims. White wine grows deeper gold. Primary fruit and flowers give way to dried fruit, leather, tobacco, mushroom or honey. Tannins polymerise and feel softer. Acids integrate. The wine grows more complex, but loses freshness. Light, fruity wines often grow flatter if you keep them too long.
Kelder of kast
Slechts weinigen hebben nog een geschikte wijnkelder. Daarom zijn er andere mogelijkheden om een voorraad, bijvoorbeeld Château Margaux, de rust te geven die hij verdient om zich te ontwikkelen. Wie geen kelder heeft, kan een wijnbewaarkast of klimaatkast aanschaffen. Dat is een soort koelkast die de flessen op de juiste temperatuur bewaart, met de juiste luchtvochtigheid. Trillingen worden gedempt en de lucht wordt door een koolstoffilter gezuiverd. Of men isoleert een geschikte kamer en brengt er een koelunit in. Die zorgt voor dezelfde omstandigheden.
Cellar or cabinet
Few still have a suitable wine cellar. So there are other ways to give a stock, for example Château Margaux, the rest it deserves to develop. Anyone without a cellar can buy a wine storage cabinet or climate cabinet. That is a kind of fridge that keeps bottles at the right temperature, with the right humidity. Vibration is damped and the air is cleaned by a carbon filter. Or one insulates a suitable room and fits a cooling unit. That gives the same conditions.
Liggend bewaren
Liefhebbers willen wel eens een fles wegleggen voor later. Met een klimaatbeheerser kunnen temperatuur en luchtvochtigheid in de kelder worden geregeld. Bewaarwijnen kunnen het beste in een wijnklimaatkast. Dat is een soort koelkast met thermostaat, waarin temperatuur en luchtvochtigheid optimaal zijn te regelen.
Een wijnfles moet liggen, zodat de kurk vochtig blijft. Bij flessen die langere tijd rechtop staan kan de kurk uitdrogen, poreus worden en te veel lucht doorlaten. De wijn verandert dan in azijn.
Store lying down
Lovers sometimes want to put a bottle aside for later. With climate control, temperature and humidity in the cellar can be regulated. Keeping wines are best in a wine climate cabinet. That is a kind of fridge with a thermostat, in which temperature and humidity can be set well.
A wine bottle must lie so the cork stays moist. Bottles that stand upright for a long time can dry the cork, make it porous and let in too much air. The wine then turns to vinegar.
Licht, vocht en temperatuur
Licht is schadelijk voor wijn. De ontwikkeling voltrekt zich te snel en niet optimaal. UV-straling van zonlicht, en TL-licht, dienen te worden vermeden. Plaats de flessen met het etiket naar boven, zodat de wijn enigszins tegen het licht is beschermd. Ook de stof die in de loop der jaren op de flessen komt, beschermt de wijn.
Een droge kelder kan de kurk laten uitdrogen. Een te hoge luchtvochtigheid is niet gunstig, omdat de etiketten gaan schimmelen. Ideaal is een luchtvochtigheid tussen 60 en 70 procent. Die is te meten met een hygrometer. Hang die op diverse plekken in de kelder om verschillen vast te stellen.
De ideale keldertemperatuur ligt tussen 12 en 14 graden Celsius. Slechts weinigen hebben een kelder die daaraan voldoet. Zorg er altijd voor dat de bewaartemperatuur constant is. Als de temperatuur niet te veel schommelt, kan wijn zelfs bij 16 graden Celsius worden bewaard. Er is vaak verschil tussen zomer en winter, en tussen dag en nacht. Hoe kleiner het verschil, hoe beter.
Light, humidity and temperature
Light harms wine. Development happens too fast and not at its best. UV from sunlight, and fluorescent light, should be avoided. Place bottles with the label upward, so the wine is somewhat shielded from light. Dust that settles on bottles over the years also protects the wine.
A dry cellar can dry out the cork. Humidity that is too high is unfavourable, because labels go mouldy. Ideal humidity is between 60 and 70 percent. That can be measured with a hygrometer. Hang it in several places in the cellar to find differences.
Ideal cellar temperature is between 12 and 14 degrees Celsius. Few have a cellar that meets that. Always keep storage temperature constant. If temperature does not swing too much, wine can even be kept at 16 degrees Celsius. There is often a difference between summer and winter, and between day and night. The smaller the difference, the better.
Trilling, geur en lucht
Door trilling kan wijn zich sneller ontwikkelen dan normaal. Bewaar wijn daarom niet op plaatsen die dagelijks trillen van verkeer, huishoudelijke apparaten of machines. Laat de wijn tot rust komen.
Een fles wijn is, ondanks de kurk, gevoelig voor geuren. De bewaarplaats dient vrij te zijn van stoffen die een sterke geur afgeven. Verwijder potten verf, jerrycans en zeeppoeder.
Wijn houdt niet van een tochtige omgeving, omdat dat te snelle afkoeling of opwarming meebrengt. Ventilatie is echter zeer belangrijk, omdat in stilstaande lucht rot en schimmel makkelijk optreden.
Vibration, smell and air
Vibration can make wine develop faster than normal. So do not store wine in places that shake daily from traffic, household appliances or machines. Let the wine rest.
A bottle of wine is, despite the cork, sensitive to smells. The store should be free of substances that give off a strong smell. Remove paint tins, jerry cans and soap powder.
Wine does not like a draughty place, because that brings cooling or warming that is too fast. Ventilation is however very important, because in still air rot and mould easily appear.
Opslag thuis zonder kelder
Je hebt geen professionele kelder nodig. Beperk licht, warmte, schommelingen, droogte en trillingen. Richtlijn: 10 tot 14 graden Celsius, liefst constant, 12 tot 13 graden voor lange rijping. Luchtvochtigheid 60 tot 80 procent, rond 70 procent om de kurk niet te laten uitdrogen. Donker: UV versnelt oxidatie en geeft lichtsmaak. Niet naast wasmachine of trillende plank. Niet naast verf of oplosmiddelen. Die geuren kunnen via de kurk komen.
Simpel: een donkere kast in een koele bijkeuken, garage of zolderhoek zonder zon. Flessen met kurk liggend, zodat de kurk vochtig blijft. Inpakken in krantenpapier of in een doos tegen licht. Schroefdop of kunststofkurk mag ook staand. Voor een grotere voorraad: een servicekast voor drinkrijpe flessen, of een rijpingskast met zones.
Home storage without a cellar
You do not need a professional cellar. Limit light, heat, swings, dryness and vibration. Guide: 10 to 14 degrees Celsius, preferably constant, 12 to 13 degrees for long ageing. Humidity 60 to 80 percent, around 70 percent so the cork does not dry out. Dark: UV speeds oxidation and gives light-struck flavour. Not beside a washing machine or a shaking shelf. Not beside paint or solvents. Those smells can pass through the cork.
Simple: a dark cupboard in a cool utility room, garage or attic corner without sun. Corked bottles lying down, so the cork stays moist. Wrap in newspaper or put in a box against light. Screwcap or plastic cork may also stand. For a larger stock: a serving cabinet for ready-to-drink bottles, or an ageing cabinet with zones.
Kurkfout in opslag
Kurkfout is trichlooranisol, TCA, geen stukje kurk in het glas. Muf, nat karton, natte kelder. De fles is niet te redden. Voorkomen in de kelder: betrouwbare kurk, geen chloorbleek bij flessen en materiaal, wel zuurstofbleek of sulfiet met citroenzuur. Schone, droge, geventileerde opslag, geen muffe vochtige hoek.
Cork taint in storage
Cork taint is trichloroanisole, TCA, not a bit of cork in the glass. Musty, wet cardboard, wet cellar. The bottle cannot be saved. Prevention in the cellar: reliable cork, no chlorine bleach on bottles and kit, oxygen bleach or sulphite with citric acid. Clean, dry, aired storage, no musty damp corner. See Faults in the cellar.
Sur lie
Sur lie, Frans voor op de droesem, betekent dat de wijn na de gisting op de fijne lees blijft, soms met bâtonnage, doorroeren. Doel: meer textuur, romigheid en complexiteit, en bescherming tegen oxidatie omdat de lees zuurstof verbruikt. Veel bij witte wijnen zoals Muscadet en sommige Chardonnay, ook bij sommige oranje- en natuurwijnen. Risico: te lang contact of vuile omstandigheden geven rotte eieren of muf. Thuis: alleen met strikte hygiëne en regelmatig ruiken en proeven.
Sur lie
Sur lie, French for on the lees, means the wine stays on the fine lees after ferment, sometimes with bâtonnage, stirring. Aim: more texture, cream and complexity, and protection from oxidation because the lees use oxygen. Common with white wines such as Muscadet and some Chardonnay, also with some orange and natural wines. Risk: too long contact or dirty conditions give rotten eggs or must. At home: only with strict hygiene and regular smelling and tasting.
Houdbaarheid
Lichte, fruitige wijnen, veel wit, rosé en lichte rood, blijven vaak één tot drie jaar goed, daarna nemen frisheid en fruit af. Middelzware wijnen, zoals betere Bordeaux, Bourgogne of Rioja Reserva, kunnen vijf tot vijftien jaar rijpen. Grote bewaarwijnen, top-Bordeaux, Barolo, Vintage Port, grote witte Bourgogne, kunnen meer dan twintig jaar, mits goed bewaard. Voorbij het hoogtepunt: vlakke, doffe geur, weinig fruit, oxidatieve tonen zoals sherry, noot of gekookt fruit. Bruinige kleur bij wit, sterk verbleekte rand bij rood.
How long to keep
Light, fruity wines, many whites, rosés and light reds, often stay good one to three years, then freshness and fruit fall. Medium wines, such as better Bordeaux, Burgundy or Rioja Reserva, can age five to fifteen years. Great keeping wines, top Bordeaux, Barolo, Vintage Port, great white Burgundy, can last more than twenty years if stored well. Past the peak: flat, dull smell, little fruit, oxidative notes such as sherry, nut or cooked fruit. Brownish colour in white, a strongly faded rim in red.
Wijn maken die oud kan worden
Bewaarpotentieel begint in de wijngaard. Gezonde, rijpe druiven met goede zuur-suikerbalans, niet overrijp of beschadigd. Tannine bij rood, zuren, alcohol en extract in balans. Schone gisting, beheerste oxidatie, passende élevage, bijvoorbeeld eiken voor tannine en micro-oxidatie. Daarna stabiele opslag: constante temperatuur, juiste vochtigheid, donker en rustig. Zonder die voorwaarden veroudert wijn snel in plaats van mooi te rijpen.
Making wine that can age
Cellar potential starts in the vineyard. Healthy, ripe grapes with a good acid-sugar balance, not overripe or damaged. Tannin in red, acids, alcohol and extract in balance. Clean ferment, controlled oxidation, fitting élevage, for example oak for tannin and micro-oxidation. Then stable storage: constant temperature, right humidity, dark and quiet. Without those conditions wine ages fast instead of ripening well.
