De brug tussen wijngaard en kelder
Nadat de druiven zijn geplukt, begint in de kelder de overgang van hele trossen naar vergistbare most. Deze fase bepaalt mede kleur, smaak, tannine en structuur. Die keuzes verschillen sterk tussen rode, witte, rosé- en oranjewijn.
The bridge from vineyard to cellar
After picking, the cellar turns whole bunches into fermentable must. This phase shapes colour, flavour, tannin and structure. The choices differ strongly between red, white, rosé and orange wine.
Ontstelen, kneuzen, persen, filteren
Ontstelen haalt de steeltjes van de tros. Die kam bevat veel groene, bittere tannine. Kneuzen maakt de bessen zacht stuk, zodat sap vrijkomt. De pitten blijven heel. Most is het mengsel van sap, schillen, vruchtvlees en soms pitfragmenten.
Persen scheidt sap van schillen, pitten en pulp. Filteren of klaren, voor of na de gisting, vermindert vaste deeltjes, gistresten en troebelheid. Bij witte wijn en veel rosés perst men snel na het kneuzen. Dan is er weinig of geen schilcontact. Bij rode wijn en oranjewijn blijft het schilcontact juist lang.
Destemming, crushing, pressing, filtering
Destemming takes the stems off the bunch. That rachis holds much green, bitter tannin. Crushing gently breaks the berries so juice is freed. The pips stay whole. Must is the mix of juice, skins, pulp and sometimes pip fragments.
Pressing separates juice from skins, pips and pulp. Filtering or fining, before or after fermentation, reduces solids, yeast lees and haze. For white wine and many rosés one presses soon after crushing. Then skin contact is little or none. For red wine and orange wine skin contact stays long.
Pulpgisting versus sapgisting
Het verschil tussen rood en wit zit in het moment van persen ten opzichte van de gisting. Bij pulpgisting gaan de gekneusde druiven, inclusief schillen en pulp, als geheel in gisting. Dat is kenmerkend voor rode wijn. Kleurstoffen, tannines en aroma's komen uit de schillen. Hoe langer de pulpgisting duurt, hoe donkerder, tanninerijker en steviger de wijn wordt.
Bij sapgisting perst men eerst. Alleen het sap vergist, zonder of met zeer kort schilcontact. Dat is typisch voor witte wijn en veel rosés. Er komt weinig tot geen kleur en tannine uit de schil. Voor rosé kiest men vaak een tussenweg: korte pulpgisting van enkele uren tot ongeveer een dag, daarna persen, daarna sapgisting.
Pulp fermentation versus juice fermentation
The difference between red and white sits in when one presses relative to fermentation. In pulp fermentation the crushed grapes, including skins and pulp, ferment as a whole. That is typical of red wine. Colour, tannins and aromas come from the skins. The longer pulp fermentation lasts, the darker, more tannic and firmer the wine becomes.
In juice fermentation one presses first. Only the juice ferments, with no or very short skin contact. That is typical of white wine and many rosés. Little or no colour and tannin come from the skin. For rosé one often chooses a middle path: short pulp fermentation of a few hours to about a day, then pressing, then juice fermentation.
Kleur komt uit de schil
Rode wijn komt van blauwe druiven, maar het sap zelf is vrijwel kleurloos. De kleur komt vrij tijdens de pulpgisting. Alcohol en warmte lossen anthocyanen uit de schil. Zonder schilcontact zou blauwe druif een witte of lichtgekleurde wijn geven. De duur van het schilcontact stuurt de tint, van lichtrood tot dieppaars, en de hoeveelheid tannine.
Rosé komt meestal van blauwe druiven met zeer kort schilcontact, uren tot circa één dag. Net genoeg voor een roze tint, weinig tannine. Oranjewijn komt van witte druiven met lang schilcontact, vergelijkbaar met rode wijn. Witte schillen geven geen rood, maar amber, goud en oranje, plus extra textuur en bittere toetsen. Ook hier komt de kleur uit de schil, niet uit het vruchtvlees.
Colour comes from the skin
Red wine is made from blue grapes, but the juice itself is almost colourless. Colour is freed during pulp fermentation. Alcohol and warmth dissolve anthocyanins from the skin. Without skin contact a blue grape would give a white or pale wine. The length of skin contact steers the tint, from light red to deep purple, and the amount of tannin.
Rosé usually comes from blue grapes with very short skin contact, hours to about one day. Just enough for a pink tint, little tannin. Orange wine comes from white grapes with long skin contact, like red wine. White skins do not give red, but amber, gold and orange, plus extra texture and bitter notes. Here too the colour comes from the skin, not from the flesh.
Druiven drogen voor persen
Bij sommige wijnstijlen droogt men de druiven na de oogst eerst, voordat ze worden gekneusd, geperst en vergist. In Italië heet dat onder meer appassimento of passito. Elders bestaan vergelijkbare technieken. Trossen liggen op stro- of rietmatten, houten rekken, in kratten of in een droogruimte. In weken tot maanden verdampt een groot deel van het water, soms circa dertig tot vijftig procent van het gewicht. Suikers, zuren en aroma's concentreren. De most wordt rijker, zoeter en intenser. Daarna volgt vaak wijn met meer alcohol, meer body of restsuiker, zoals Amarone, Recioto en andere passito-wijnen.
Drying grapes before pressing
Some wine styles dry the grapes after harvest first, before crushing, pressing and fermentation. In Italy that is called appassimento or passito among other names. Similar techniques exist elsewhere. Bunches lie on straw or reed mats, wooden racks, in crates or in a drying room. Over weeks to months a large share of the water evaporates, sometimes about thirty to fifty percent of the weight. Sugars, acids and aromas concentrate. The must becomes richer, sweeter and more intense. Then one often gets wine with more alcohol, more body or residual sugar, such as Amarone, Recioto and other passito wines.
Pluk, pers en temperatuur
Druiven voor betere kwaliteitswijn worden vaak met de hand geplukt. Voor grote volumes gebruikt men steeds vaker machines. In een tuinwijngaard of klein perceel blijft handpluk gebruikelijk omdat je rijpe trossen kiest en de schil intact houdt. Gemiddeld zitten er ongeveer honderd dagen tussen bloei en pluk. Te vroeg geoogste druiven geven harder sap en een snellere gisting. Rijpe druiven gisten langzamer en geven vollere wijn.
Vroeger perste men met de voeten of met een zware balk op een houten kooi. Tegenwoordig werken hydraulische of luchtdrukpersen horizontaal. Korte perstijd en weinig zuurstof bij het sap beschermen de kwaliteit. Het vaste rest heet druivenmoer. De temperatuur van de most stuurt de snelheid van de gisting. Langzame gisting geeft meer fruit en body. Bij rood vormt zich een dikke laag schillen boven de most. Die hoed moet je regelmatig doorbreken.
Picking, press and temperature
Grapes for better quality wine are often picked by hand. For large volumes machines are used more and more. In a garden vineyard or small plot hand picking remains usual because you choose ripe bunches and keep the skin intact. On average about a hundred days sit between flowering and picking. Grapes picked too early give harder juice and faster fermentation. Ripe grapes ferment more slowly and give fuller wine.
In the past one pressed with the feet or with a heavy beam on a wooden cage. Today hydraulic or air-pressure presses work horizontally. Short press time and little oxygen at the juice protect quality. The solid remainder is called grape pomace. Must temperature steers the speed of fermentation. Slow fermentation gives more fruit and body. With red a thick layer of skins forms above the must. That cap must be broken regularly.
